Chop the peppers, peppermint (you can also use basil or any favorite herb, use a lot), and hazelnuts. Mix with the cheese and any spices you are adding.
For each sandwich use two multi-grain toast slices, line with lettuce and about 4 sliced mushrooms, and add a heaped tablespoonful of chees mixture.
