Hot italian turkey sausage with mushrooms and veggies

Ingredients
2 garlic cloves chopped1 medium onion sliced1 chopped red bell pepper4 oz. mushrooms sliced, {I like the gourmet blend I find at whole foods, it's presliced}1 small eggplant, 1 cup chopped3 hot italian turkey sausage1 tbl. olive oil3 cups whole wheat pasta, cooked1/2 cup chicken brothtsp grated parmesan, optional
Directions
heat a large skillet on med high, add sausage and 3 tbl of water, cover and cook for 5-6 minutes. remove sausage and slice into 1 inch slices, set aside.

add olive oil to pan saute mushrooms with garlic,until almost cooked through add eggplant, onions,pepper, and sausage saute 3 more minutes add salt and pepper to taste.
Then add chicken broth slowely. cover and simmer 3-5 minutes until broth reduces and thickens up, I like to add crushed red pepper to spice it up, maybe a teaspoon of parmesan cheese.
