DRESSING: (or use 1 cup prepared catalina dressing)dash black pepper1 Tbsp. cider vinegar2 Tbsp. catsup1/8 tsp. salt1/4 large onion, grated2 Tbsp. Splenda1/4 cup olive oilSALAD INGREDIENTS:3 cups cooked brown rice1 15.25 oz. can whole kernel sweet corn1 cup dry roasted sunflower seeds, unsalted2 cups fresh peas or frozen peas, thawed2 cups peaches, canned in lite syrup1/2 cup chopped red onion1/2 cup chopped fresh parsley
Mix together the first six dressing ingredients. Gradually beat in oil.
Mix together all the salad ingredients, including dressing, in a large bowl. Refrigerate until ready to serve.
