Barley Slaw Casserole

1 cup uncooked Pearl Barley3 tbsp Extra Virgin Olive Oil1 medium Onion, chopped2 stalks celery, chopped2 cups fresh mushrooms, chopped1 clove garlic, minced2 tsp tomato bouillon4 1/2 cups boiling water1 (12 oz.) pkg frozen corn1 (16 0z.) pkg Cole Slaw Mix2 tsp parsley flakes1/4 cup slivered almondssalt & pepper to taste
In large saute pan, heat olive oil and roast raw barley until golden colored. Stir in onions, celery, mushrooms and garlic. Cook until vegetables are tender. While vegetables are cooking, bring water to a boil and add tomato bouillon. Pour in 2 1/2 cups bouillon mixture to vegetables and cook at medium heat on stove top for approximately 30 minutes or until liquid is absorbed.
Preheat oven to 350 degrees. Add in frozen corn, cole slaw mix, parsley and remaining bouillon mixture. Bake in oven an addition 45-60 minutes and barley is tender. Sprinkle with almond slivers and serve.
Makes approximately 6 servings.
