Crustless Spinach, Ham, and Cheese Quiche

One 10 oz package froxen chopped spinach4 eggs1/2 cup light sour cream1 1/2 cup lowfat small curd cottage cheese1/4 cup grated parmesan cheese1 1/2 cup cooked diced ham4 tablespoons flour1 teaspoon salt1/2 teaspoon black pepper2 cups shredded lowfat cheddar cheese
Preheat oven to 325 degrees. Place spinach in microwave for 4 minutes. Allow to cool, then drain liquid. Place spinach in medium bowl. Place eggs, sour cream, cottage cheese, parmesan cheese, four,salt, and pepper in blender or food processor. Blend for about one minute or until mixture is smooth. Pour mixture into bowl with spinach. Add ham, and cheddar cheese. Blend with a spoon. Spray a 9x13 baking dish with cooking spray. Pour mixture into dish, smooth the top out with the back of the spoon. Bake for 45 minutes. Allow to cool before cutting.
