Curried Quinoa Salad with Mango

Ingredients
2 cups (dry) quinoa, cooked and fluffed1/2 cup virgin olive oil4 tbsp. lime juice2 tbsp. hot mango chutney1 tbsp. curry powder1 tsp. dry mustardsalt to taste1 T Better Than Bouillon Organic Chicken Reduced Sodium2 mangos, cleaned and chopped ( 2 cups)2 large English cucumber, with peel, chopped ( 4 cups)1 red bell pepper, chopped ( 1 cup)6 green onions, chopped ( 1 cup )
Directions
Start to cook your quinoa first. If you aren't vegetarian, use an appropriate amount of chicken boullion with your cooking water.

Combine next 5 ingredients ( oil, lime juice, chutney, curry powder, dry mustard ) and whisk.

Chop up all the vegetables. Toss in 1/2 of the dressing.

When the quinoa is done, let it cool a bit and fluff it with a fork, then add to vegetable mixture, and mix in remaining dressing.

By my calculations, this makes 14 one cup servings.
