Zucchini Sausage Pasta

Ingredients
1 Tbsp Olive oil2 cloves garlic1/3 cup chopped onion3 cups quartered and sliced zucchini3/4 cup tomato saucedash of salt and crushed red pepper1 box (7 2-oz. servings) whole wheat pasta - rotini1 package (14 oz) Butterball Everyday Turkey Sausage1 1/2 cups shredded swiss cheese (substitute any cheese)
Directions
Boil water for pasta. In skillet, fry zucchini, garlic, and onion in olive oil. Sprinkle with salt and red pepper. Cook until crisp tender. Remove from pan (keep warm). Cook pasta in boiling water. Meanwhile, cut and slice sausage and fry in the skillet you used for the veggies. After browning sausage, add in vegetable mixture and tomato sauce. Add in cheese Keep on low until pasta is ready. Add in pasta and mix well. Serve alone or with a salad.

    Quick and easy to prepare. I though it looked a bit boring in the pan, so I added a dash of chili sauce, and it was a surprisingly enjoyable meal. I will add this to my recipe collection. - 3/25/19
