Canola Oil2-3 boneless, skinless chicken breasts, cubed1 package turkey sausage, cubed1 Tbsp margarine1 green pepper, diced1 onion, diced2 celery stalks, diced1-2 Tbsp unbleached flour2 cans chicken stock/brothgarlic to taste, diced1 can diced tomatoes1 Tbsp chili powder1 Tbsp cuminsalt & pepper to taste2 bay leaves2 cans black beans, drained1 can drained or frozen package corn
Brown cubed chicken and turkey sausage in canola oil. Once browned, drain fat and set aside. In your largest skillet add margarine and some canola oil and saute green pepper, onion and celery until soft. Once soft add the chicken and turkey sausage back in and continue to cook for a couple of minutes. Add whole wheat flour to firm it up. Add in the chicken stock and garlic. Add in spices and tomatoes and bring to a boil. Reduce heat to simmer. Add beans and corn and continue to simmer for a few more minutes.
*Orignal recipe didn't call for rice, but mine was soupy the first time making it so I added some Minute brown rice at the end and it thickened up nicely.
I measured this out to be 13, 1 cup servings once cooked.
