Anais's Favorite Scramble

8 eggs (free range and/or organic REALLY taste much better!)3 cloves garlic (2 if you're a garlic pansy)1/2 cup or more of grated or chopped Sharp cheddar cheese
Use a non-stick skillet. I usually use a little butter and olive oil, but for SparkPeople, I'm writing it for lower fat. Use a cooking spray in the pan, and gently roast the chopped garlic over low to medium heat until the aroma is released and it just begins to turn golden. Break the eggs into a medium bowl and gently beat with a fork to blend. Pour into the hot skillet and add the cheese. Mix and turn mixture with a fork or spatula until eggs are all cooked through and cheese is melted.
Makes 4 happy servings. Nice with whole grain toast and a slice of tomato.
