Low GI Meatloaf

Ingredients
700g Lean Ground Beef,250 ml tomato juice75g large flake oats1 medium egg, lightly beaten1 tbsp worcestershire sauce1 medium onion, chopped1/2 tsp salt1/4 tsp ground pepper
Directions
Preheat oven to 180 oC, gas mark 4.

In a large bowl combine all ingredients. Mix lightly but thoroughly.

Press the mixture into a 8 x 4 in loaf tin. Bake for 1 hour until firm when pressed, or until meat thermometer registers 70oC in the centre.

Let the meatloaf stand for 5 mins before draining off any juices and slicing it.

Makes 6 servings.
