Sausage and Brown Rice Casserole

1 lb. pork sausage2 c. cooked brown rice1 c. milk1 lg. stalk celery1 chopped onion1 can cream of chicken soup3 oz. shredded mozzarella cheese
Cook and stir pork sausage in Dutch oven until brown; drain. Stir in rice, milk, celery, green pepper, onion, soup and mushrooms. Pour into ungreased 2 quart casserole; sprinkle with cheese. Bake uncovered in 350 degree oven until center is bubbly, about 45 minutes. 6 servings.

This was a delicious, quick and easy recipe which my family absolutely loved. To make it even easier (and since I was short on the noted ingredients), I omitted the celery and onion and substituted cream of celery for cream of chicken. It was fanatastic. Will def be making this 1 again :) - 1/3/11
