Curried Dal Crockpot Soup with Veggies

Ingredients
1 cup of yellow lentils (Dal)1 cup of chopped baby carrots1 cup of chopped vidalia onions2 cloves of garlic, (pressed)1 14-oz can of chopped tomatoes1 teaspoon salt1/4 teaspoon of pepper1 tablespoon of olive oil1 tablespoon of butter2 tablespoons of curry powder
Directions
Makes 3 2-cup servings.

Mix all ingredients except for tomatoes, butter, oil and salt in a 4-quart crockpot.

Cover and cook on low heat for 6 hours or until Dal is tender.

Stir in tomatoes, oil, butter and salt.

Let butter melt and serve.
