Spanish Rice

Ingredients
2 Tbs oil1 onion, chopped1/2 green pepper, chopped1 clove of garlic, minced1 cup rice2 cups water1 10 oz can tomatoes with green chili1 tsp salt2 tsp chili powder
Directions
Heat oil in a saucepan over medium heat. Add onions, peppers, garlic, and rice. Saute until onions are translucent and rice is golden. Add remaining ingredients, bring to a simmer and cover. Cook for approximately 30 minutes, or until liquid is absorbed. Serves 6
