I made this soup but added garlic and onion plus 1 tbs. of cornstarch to thicken. Excellent soup with a sandwich. - 4/19/08

Yummy quick soup. I left skins on potatoes, let the soup simmer for about an hour and used a potato masher to break up the potatoes a bit to thicken the broth. I am normally used to a heavy cream (FAT) based potato soup but this one I can definitely do! Very filling without weighing you down. - 12/4/11

I added peas, carrots, chopped up chicken, and lots of dill. Served with a slice of wheat bread, it made a wonderful dinner! - 4/30/08

Sounds great, use reduced/low sodium broth and don't add any while cooking, would be great with onions, garlic and carrots for added flavor - 4/19/08

When it cools off a little outside, I am going to make this for my hubby. He loves leeks. Me...not so much. - 6/22/21

Very easy to put together. I wish I would have added chopped celery with the leeks. I did add celery seed, garlic powder and red pepper flakes. I also mashed the potatoes so it would thicken. - 1/20/21

Lovely: my own recipe for leek and potato contains milk and cream and so this is less calorific and heathier. - 6/19/11

I didnt use the olive oil at all- just throw in the potatoes, finely chopped leek and chicken broth in a soup pot then simmer. I also put a couple of bay leaves-salt and pepper to taste. - 9/2/10

I made this today but added mushrooms. I used a low sodium broth, therefore it lacked the flavor it would have had if it was made with the broth you suggested. I just need to adjust my taste buds. - 7/7/09
