low fat dirty mashed potatoes

Ingredients
4 medium potatoes4 oz fat free sour cream1/4 cup skim milk1 dash salt
Directions
Clean potatoes, then chop into bite-sized pieces, leaving the skin on. Boil for 20 minutes, or until tender. Drain. Either in the pot or in a large bowl, mash the potatoes (using desired method) adding in milk, sour cream, and salt to taste.

Makes approximately 4 servings.

    This sounds soooo good. I want mashed potatoes so badly, you have no idea. I think I'll substitute the sour cream for Plain Greek Yogurt. It will give it some more protein and less sodium than the sour cream. Seriously, yummy! - 7/26/10

    This was a real treat! I made it according to the recipe, except I added a little bit of black pepper with the salt. The potatoes came out nice and light and fluffy, with a bit of zip to them. They're my husband's new favourite, and he's not even trying to lose weight! - 8/4/10
