1 T Extra Virgin Olive Oil1/2 C Diced Red Pepper1/2 C Diced White Onion3 Cloves Diced Garlic24 Oz Boneless Skinless Chicken Breast, Cubed2 14.5 Oz Cans Chicken Broth1 28 Oz Can Diced Tomatoes1 C White Wine1 1/2 C Long Grain White Rice, Uncooked
In a dutch oven, sautee' onion, red peppper and garlic in oil until onion is translucent. Add cubed chicken and cook until pink color is gone from chicken. Add chicken broth, diced tomatoes, and white wine and simmer for 20 minutes. Add rice and return to simmer. Cook for 15 minutes or until liquid is absorbed. Makes 8 1.5 cup servings.
