8 oz pork tenderloin3 Tbsp soy sauce1 Tbsp minced garlic2 Tbsp ginger root, minced8 oz UNCOOKED whole wheat spaghetti1/2 cup carrots, thinly sliced8 oz mushrooms, sliced1/2 cup chicken broth1 tsp sesame oil1/3 cup scallion
Makes 5 servings.
Mix 2 Tbsp soy sauce, garlic & ginger and pork - let marinate for 15 minutes. Cook spaghetti and add carrots at 5 minutes before done cooking. Cook pork and mushrooms in large skillet until mushrooms release their juices and pork is cooked through. Add spaghetti, carrots, broth, remaining Tbsp soy sauce and sesame oil to skillet and toss until combined. Stir in scallions and serve!
