Cheese Quesadilla

Ingredients
1/2 Medium Onion (chopped)1/2 Green Pepper (or any bell pepper)2 Whole Wheat Tortillas1 c. shredded 2% cheese2 tbsp Extra Virgin Olive Oil1 tbsp Minced Garlic
Directions
In skillet saute onion, garlic and pepper in 1 tbsp of olive oil.
Remove from skillet after onion and pepper are soft
Coat bottom of skillet with 1 tbsp of olive oil and heat to medium heat
Divide onion/pepper mixture between two tortilla and top each with 1/2 c of cheese and fold
Put each into skillet and heat on both sides until cheese is melted and tortilla is crispy.
Remove from skillet and cut each into 3-4 pieces
