Moroccan Lamb Curry (James Martin)

2 tbsp olive oil650g diced lamb1 tbsp plain flour1 tsp ground ginger2 tsp ground cumin2 tsp ground coriander1 tsp cayenne pepper1 tsp turmeric110g sultanas or raisins110g chopped dates1 pint chicken stock1 red onion, chopped2 stalks celery, chopped3 cloves garlic, chopped
Mix the flour with the spices. Dip the lamb in the flour mix to coat. Fry the meat in 2 tbsp olive oil to brown then remove from pan & set to one side. In the same pan fry the onion, garlic & celery until soft. Stir in any remaining flour mix. Gradually add the stock. Return the lamb to the pan. Add sultanas & dates. Cover with a lid & cook slowly on a very low heat for 1 hour.
