Tuscan Rice Salad

Ingredients
2 cups cooked rice2 cups diced ripe tomatoes2 small dill pickles, minced (hot pepper ones are really good!)1/4 cup olive oiljuice of half a lemon2 oz grated asiago or romano cheese1 tin of tuna in water, drained2 hard cooked eggs, cut in wedges2 Tbsps fresh basil cut in thin strips1 Tbsp dry parsley ( or fresh if you prefer)salt and pepper to taste.
Directions
Toss all ingredients together in a bowl except for eggs. Decorate the top of the salad with the egg wedges. Eat at room temperature or chill completely.
