Number of Servings: 8


    6 slices bacon, chopped
    2 cups chopped onion
    4 cloves garlic, minced
    1/2 cup celery, chopped
    1 cup carrots, chopped small
    1 cup mushrooms, chopped
    1 tbsp red pepper flakes (to taste)
    salt and pepper
    1 tsp ea oregano, basil
    5 cups chicken stock (low fat, sodium)
    28 oz can stewed tomatoes
    1/4 cup orzo (or other small pasta)


In a large stock pot, cook bacon until most of fat rendered. Add onions, garlic, carrots, celery, mushrooms and cook until onions transparent.
Add red pepper flakes, oregano, basil and salt and pepper.
Add chicken stock and stewed tomatoes.
Bring to a boil, and add pasta.
Cook until al dente.
Check for seasoning and adjust if needed.

  • Very good, left out the mushrooms because I thought we had some at home but didn't and cut the amount of tomatoes in half. Even my husband ate it and said it was good. - 8/7/10
