Ingredients
39 oz. low sodium V8 juice29 oz. chopped tomatoes with juice2 cups cooked barley1 cucumber, peeled, seeded, diced1 red bell pepper, diced1/4 cup chopped cilantro1/4 cup chopped green onions1/2 ripe avocado, sliced for garnish
Directions
Combine all ingredients except avocado and chill overnight. To serve, garnish with avocado.
