Ingredients

    1 tablespoon olive oil
    1 tablespoon chopped shallot
    2 teaspoons red wine vinegar
    1/2 teaspoon honey
    4 cups mixed baby greens
    handful fresh herbs (basil, parsley, or tarragon)
    1 peach, pit removed and sliced
    1 ounce soft goat cheese

Tips

Make it a full meal. Serve with Dijon-Herb Pork Tenderloin or a few strips of bacon.


Directions

Combine the first four ingredients in a large bowl. Add the greens and toss well to combine.
Place on a salad plate and top with the herbs, peaches, and goat cheese.
Season with black pepper.

Serving Size: 1 salad as an entree or 2 as an appetizer

    Very good. I may use white wine vinegar next time. I added pumpkin seeds for some more protein and to make it more of a meal. As an after thought I had some honey goat cheese that would go well on this next time! - 7/28/13

    This was really good. I didn't like the handful of herbs, which I will probably skip next time. It might have been the combination I used, but it was too strong and clashed with the sweetness of the peaches and dressing.

    (The 'peaches' in the photo look like canned apricots.)
