Oyaku Donburi

Ingredients
1 T Oil1 lb Chicken, cubed1 small onion1 Cup Chicken BrothSliced Mushrooms1 Carrot in small slices2 T White Sugar1/4 Soy Sauce5 Eggs, beaten
Directions
Heat Oil in large skillet at Med-High. Saute Chicken and Onions until Chicken is cooked though. Drain liquid. Stir in Chicken broth and simmer for 2 minutes. Add mushrooms and carrots and simmer for a few more minutes. Stir in sugar and soy sauce, simmer 3 more minutes. Pour Eggs over Chicken mixture and simmer until eggs are cooked though, about 10 minutes. Serve over rice.
