Oatmeal Cottage Cheese Pancakes

Ingredients
1/2 cup cottage cheese4 egg whites or 1/2 cup boxed egg whites 1/2 tsp baking powder 1/2 tsp vanilla 1-2 Tbsp splenda 1/2 tsp salt 1/2 cup instant oatmeal
Directions
Mix everything in a blender except for the oatmeal until smooth.
add the oatmeal and blend briefly, you want it to stay "chunky"
Let it sit for at least 5-10 minutes so the oatmeal can soak up the extra liquid. I actually like to make this before bed and leave it in the fridge overnight so its ready as soon as i wake up.
fry on medium in a lightly greased pan, 3-4 minutes per side, until golden and cooked through.
