32 oz. Eggbeaters1 Lg. Vidalia Onion1 Lg. Red Pepper2 C. sliced Mushrooms2 C. Fresh broccoli florets8 Slices Reduced Fat American Cheese
Put all vege's uncooked in 9 X 13 baking pan (I use my stoneware). Pour 32 oz. container of eggbeaters over all vege's. Bake in 350 oven for 30 minutes or until done. Cut into 8 and serve with 1 slice reduced fat cheese on top melted.
I use whatever vege's I have on hand. I also let it cool; cut into 8 equal pieces and freeze so that I have a quick breakfast to bring to work. By the time I get to work and am ready for breakfast, my eggbake has thawed and I microwave it then put my piece of cheese on.
