Chicken and Mushroom Soup

Ingredients
1 cup mushrooms- I recommend portabello1 Cup Chopped onion2 Tbsp Olive oil3 cups vegetable broth1 cup carrots sliced thin2 Tbsp celery chopped1 Tbsp red wine vinegar1 cup cooked chicken breast(broiled)cooled and chopped
Directions
In saucepan, saute the mushrooms and onions in the olive oil until browned about 10 minutes.
Add the broth, carrots, celery, vinegar bring to a boil.
Reduce heat and simmer for 20 minutes.
Add the cooked chicken. Heat for two minutes.
Serves four
