Blueberry Butter Muffins

1/2 cup sugar1/4 cup butter1 egg1 egg white2 cups all-purpose flour2 teaspoons baking powder1/2 cup milk (I used whole milk)1 teaspoon vanilla2 cups fresh or frozen blueberries
Cream together sugar and butter until light and fluffy. Add one egg at a time to creamed mixture, mixing well after each. Sift flour and baking powder together.Add to creamed mixture alternately with milk. Blend in vanilla. Fold blueberries into mixture.
Bake in paper-lined or buttered muffin tins at 350 degrees for about 25 minutes. Sprinkle with coarse sugar before baking, if desired.
Makes about 18 muffins. Serving size is one muffin.

You know, I think that making 18 muffins would probably make them more full. I am glad you enjoyed them, these are my family's favorite!
