Hearty Vegan Masala Curry

Ingredients
* *Cooked or Canned Chickpeas (garbanzo beans), drained 1 cup * *Cashew Nuts, raw, 0.125 cup * *Red Lentils, 1 cup * *Texturized Soy protein, 3 cup * *Yellow Summer Squash, 2 medium * *Onions, raw, 1 medium (2-1/2" dia) * *Olive Oil, 2 tbsp * *Coconut Milk, 2 cup * *Curry Powder, Garam Masala, 2 tbsp * *Sauce - Soy Sauce - La Choy, 2 tbsp * *Water- 3 cups * *Brown rice, 2 cups prepared * *Fennel, 8 tsp.
Directions
Makes 8 1 cup servings

1. Dice 1 medium onion and 2 medium yellow squash.
2. Heat 2 Tbsp. olive oil in a skillet over medium heat.
3. Sauté onion and squash for 5 minutes.
4. Add 1 c. red lentils.
5. Stir in 2 heaping Tbsp. garam masala curry powder.
6. Add 1 c. chickpeas, 1/8 c. raw cashews, and texturized soy protein, 2 Tbsp soy sauce, and 3 cups water.
7. Cover and let simmer 30-45 minutes, stirring occasionally.
8. Serve each serving over 1/2 c. prepared brown rice.
9. Enjoy and chew on 1 tsp. fennel after dinner!
