Spinach Cheese Bake

1 - 16oz bag of frozen chopped spinach, thawed1 - cup shredded cheese (I used Sargento Chedder Jack)1 - cup skim milk5 - large egg whites1 - dash of salt1 - dash of pepper.5tsp - ground mustard
Preheat oven to 350. Mix all ingredients together and bake in an 8x8 pan for 30-40 minutes, or until middle is firm. Let top brown a bit. I sometimes add Italian breadcrumbs on top for a bit of a "crust".
