Barbecued Pulled Pork

2 pound pork loin roast1 medium onion, coarsely chopped 1 tablespoon chili powder 1/4 teaspoon salt, optional 3/4 cups water 1/2 cup ketchup 2 Tbsp cider vinegar
In a Dutch oven, combine meat, onions, chili powder, salt if desired, water, ketchup and vinegar. Cover and simmer for 4 hours or until the meat falls apart easily. Skim off the excess fat. With a slotted spoon, remove meat, reserving cooking liquid. Shred the meat with two forks. Return to the cooking liquid and heat through. Serve on homemade whole wheat rolls : )
