Cucumber Salad

Ingredients
4-8 Thinly sliced fresh cucumbers2 peeled carrots3-4 thin slices of a medium white onionSeasoned rice vinegarChinese Hot Chili Sauce (if desired)
Directions
Thinly slice cucumber, carrot and onion.
Toss with 3 T. rice vinegar.
Add Chinese hot pepper sauce to taste, a scant quarter teaspoon to start.
Makes 4 servings.
