Ingredients
Ingredients:Flour, white, 1 cupRicotta Cheese, part skim milk, 1 cupRomano Cheese, 1 oz Salt, 1 tspPepper, black, 1 tspGarlic powder, 1 tsp
Directions
Makes approx four 1 cup servings

In a large bowl
Using a wooden spoon, mix until well blended
ricotta Cheese, garlic powder, salt and pepper
Add flour and cheese to mixture until you get a dough like blend.
Using your clean hands, form dough into a large lump.

Break lump into about 10 sections.
Roll 1 section into a long 1inch thick string shaped pieces.
Cut each piece with a butter knife into aprox 10-15
1 inch macaroni.
Continue with the rest of the dough sections.
Store macaroni on a sheet of wax paper, keeping them separated.
Once finish with all the dough, place in the refrigerator.
Boil a pot of water, add olive oil and salt.
Cook macaroni approximately 3-5 minutes or until they float to the top.
Strain macaroni, do not rinse with water, and serve with favorite italian gravy (sauce).
Enjoy with a nice piece of Italian bread.

    I remember my mother making these when I was a kid. I found another recipe that uses whole wheat flour, which I prefer, but these are good. Note the discrepancy in the serving size, though: I think the calorie count is for a two-cup serving. - 5/21/13
