Chicken & Dumplings
- Number of Servings: 4
Ingredients
Directions
For the Chicken: 2 Large bone-in chicken breasts4 cups water3 chicken bouillon cubes 1/4 teaspoon pepper 1 bag Kroger frozen Mirepoix style veggies (carrots, onion & celery)For the Dumplings:1 1/2 tbsp olive oil1/2 cup nonfat milk 1/2 cup all purpose flour 3/4 cup whole wheat flour1/2 tablespoon baking powder 1/2 teaspoon each salt & sugar 1 teaspoon parsley (optional)
Put the chicken in a large pot and cover with water. Bring to a boil and reduce heat. Let simmer slowly for about 30-45 minutes. Remove chicken and strain broth and fat. Take chicken off the bone and set aside. Put the strained broth back into the pot and add bouillon and pepper. Bring to a boil to completely dissolve bouillon: reduce heat and add chicken back to pot along with the Mirepoix mix . Add a little more water if you think it's too thick.
While the broth is starting to cook on the stove prepare your dumplings. Get out a big bowl and mix up the oil and milk. Add the flour, baking powder, salt and sugar. Mix it up to a stiff batter, like for drop biscuits. Set it aside until you need it. (or if time allows, make 16 pretty flattened little pillows)
When the broth, veggies and chicken are simmering slowly, it is time to drop in the dumplings. Take small rounded scoops of the dough with teaspoon and drop them into the simmering broth, on top of the boneless chicken. Keep dropping the dough blobs until you have scraped the bowl clean. Now put the lid on the pot and let it simmer for 20 minutes. Do not peak. Let the dumplings simmer covered for the full 20 minutes.
Serve piping hot.
