16 oz chicken breast, cut into 1-inch cubes1 Tbsp olive oil1 cup onion, sliced 1/2 cup celery, sliced (optional)1/2 cup green pepper, sliced (optional)1 Tbsp garlic, minced15 oz can diced tomatoes 8 oz can tomato sauce 1/2 tsp salt1/4 teaspoon pepper 1 tsp basil1/2 tsp oregano
Heat the oil in a medium skillet. Add the chicken, onions, green pepper, celery and garlic in the same pan until they are tender and fragrant. Add the remaining ingredients. Stir it up and bring it to a boil. Reduce the heat to medium low and let the pan simmer for about 15-20 minutes, stirring occasionally.
