grilled veggie pizza

Ingredients
* Pizza Crust Dough, 510 grams approx 1.25 lbs * Red Ripe Tomatoes, 1 large whole (3" dia) * Onions, raw, .25 cup, sliced * Green Peppers (bell peppers), .25 cup, strips * Mozzarella Cheese, whole milk, .5 cup, shredded * Olive Oil, 3 tbsp
Directions
stretch dough to fit 9X 13 baking sheet coated with half the olive oil. Coat top of dough with remaining oil and let rest for 20 minutes. in the meantime preheat grill on low. Dice tomato and saute onion and pepper in non stick skillet. Place dough on grill monitor closely running when top is dry and beginning to form bubbles. ass toppings and monitor closely until cheese melts. Remove from grill and cut into 8 slices. one serving is two slices !
