Spanish Rice

Ingredients
2 c. water2 c. V8 juice, low sodium1 vegetable bouillon cube2 c. brown rice, raw1 c. onion, diced1 c. celery, diced1 tsp. black pepper
Directions
1. Bring water, V8 juice and bouillon cube to a boil. Add rice, return to a boil, reduce heat, cover, simmer for 20 minutes.
2. When rice is cooked, stir in onion, celery and black pepper.
3. Serves 8.
