Spanish Rice & Cheesy Weiners

2 c. water2 c. V8 juice, low sodium1 vegetable bouillon cube2 c. brown rice, raw1 c. onion, diced1 c. celery, diced1 tsp. black pepper12 hot dogs4 oz. cheddar cheese, cut into strips
1. Bring water, V8 juice and bouillon cube to a boil. Add rice, return to a boil, reduce heat, cover, simmer for 20 minutes.
2. Slice weiners lengthwise, not completely through. Stuff with strips of cheddar cheese.
3.When rice is cooked, stir in onion, celery and black pepper. Pour into greased casserole dish.
4. Top with stuffed hot dogs.
5. Bake at 350 for 20 minutes.
6. Serves 6.
