Peach Dumplings

Ingredients
3 TBS Olive Oil6 Eggs9 TBS Farina3 TBS Salt4 C Flour16 peaches4 C Cottage Cheese (low fat) (fat free to reduce even more)
Directions
Makes 16 Dumplings
Mix flour, eggs, oil, farina, salt together to form a dough (to shorten time, use a dough mixer) The dough should be like elastic when pulled.

Separate the dough into 16 small golf sized balls.
Roll the ball out and then form around the peach.
Repeat until all is finished.
Place dumplings in boiling water for 10 - 15 minutes until they float.

Remove from water to serve with a 1/4 C of Cottage Cheese on the side.
