Black Bean Chili

Ingredients
1 T Olive Oil1 Onion, Chopped2 Cloves garlic, Minced2 Jalapenos, seeded and chopped1 C frozen corn2 (15 oz) cans black beans, undrained1 1/2 C Chicken broth1 T Chili Powder1 T Cumin1-2 C Chunky salsa1/2 t Cayenne peppersalt and pepper to taste1 C shredded Colby Jack Cheese
Directions
Heat oil in soup pot. Sautee onion, garlic, jalapenos, & corn. Add remaining ingredients. Remove 1-2 cups (or more if desired) and blend in blender. Return to pot and let simmer 10 minutes. Top with shredded cheese if desired.

    I really loved this recipe. It was even better the next day. All of the ingredients were easy to find, and most I had already. My son couldn't get enough. I think it is an easy recipe to modify to your taste as well. I left out the jalapeƱo and there was still enough spice and flavor. - 3/15/07
