Fettuccine Alfredo with Chicken (1 c)

16 oz fettuccine2 boneless, skinless chicken breasts10 fresh sliced mushrooms (optional)4 Tbsp butter, divided2 Tbsp flour1 tsp dried parsley1/2 tsp onion powder1/2 tsp salt1/2 tsp pepper2 cups 2% milk1/2 c grated Parmesan cheese
Prepare fettuccine according to directions; toss with 2 Tbsp butter.
Meanwhile, melt remaining butter (2 Tbsp) in large saute pan. Add chicken, cut into bite-sized pieces (10 fresh, sliced mushrooms are a nice addition, too--not included in this calorie count). Cook approximately 10 minutes or until chicken is done.
Stir in flour, parsley, onion powder, salt, and pepper. Add milk; stir continuously while bringing it to a boil until mixture thickens slightly. Add fettuccine and Parmesan cheese, tossing to coat.
Serve immediately. Makes approximately 10 (1 c) servings. Excellent with sides of salad, corn, and French bread!

Nice recipe taste great, how do you get 10 1 cup servings when there is only 2 cups of liquid. I keep seeing recipes with 200 calories but the portion yield is hard to understand - 10/25/08

Hey, KMartin--glad you like it. This recipe is not just the alfredo sauce--the noodles and chicken add quite a bit of volume as well. So if you make the entire recipe, you'll end up with 10 cups of food, which can be divided up into 10 (1 c) servings. Each cup of it is 206 calories. Hope this helps.

Be careful of the calorie count. 16 oz of most pastas would be 1600 calories (200 calories per 2 oz) Even if you split it between 10 servings, that's 160 calories just for the pasta-not counting sauce or chicken. The nutritional breakdown shows 64 calories from the pasta- WRONG! - 1/16/10

Thanks for pointing this out! I haven't been paying much attention to the comments on this recipe til today, & I checked on it. Apparently 2.5 years ago when I punched in the nutritional info, SP's "Spaghetti, cooked (pasta)" averaged out to about 100 calories off/serv. Sorry for the misinformation.

Delicious! I make this without any butter by using olive oil to cook the chicken and vegetables (I add the mushrooms as well as julienne cut onions and colored peppers and broccoli or asparagus). The pasta I just rinse a second time before adding it to the pot, eliminating the need for butter. - 5/1/13

AMAZING TASTING & SUPER QUICK. I used seasoned salt vs. regular salt , an extra 2 TEASPOONS of flour , whole wheat pasta & seasoned the chicken in some Mrs.Dash Italian Medley .. SO GOOD. Better than some restaurant Alfredo's I've had. But of course , every one has their own preferences .. - 3/29/11

This was the first time I attempted an Alfredo Sauce, it was okay. I think next time I need to preseason the chicken, Add some garlic to the recipe Or something to add flavor to it, I could have lost some of the flavor by using olive oil, instead of butter. I will make this again. - 2/4/09

JMBOWMAN-- There have been a few occasions where the ckn has tasted bland, though I have followed the recipe exactly. I haven't been able to pinpoint why. So maybe trying it with a different brand of chicken would be an option. Sorry that it turned out that way for you this first time.
