Easy Shrimp "Fried" Rice

2 Tbs Olive Oil1 Cup Celery, sliced on diagonal2 Cups fresh chopped cabbage1 Cup fresh carrots sliced on diagonal1 small onion chopped1 cup fresh snow peas, chopped or can use frozen green peas2 Cups cooked white rice, can use brown rice 2 eggs, slightly beaten2 Tbs lite soy sauce8 oz small raw, cleaned shrimp, can use frozen
In large non stick skillet, heat olive oil and add onion, stir until becomes clear. Add other vegetables and keep stirring until heated through, still crispy. Add cooked rice and heat. Make a "well" in the middle of skillet and add beaten eggs, stir the rice mixture back into the eggs and cook until done, add shrimp cook till heated through and shrimp is done. Remove from heat, add soy sauce and serve.
