Peach Oat Crisp

Ingredients
Filling:4 Cups Sliced Peaches in their own Juice2 tsp white sugar1 tbsp lemon juiceTopping:1 cup dried oats1 tsp vanilla extract2 tbsp flour1/4 cup brown sugar1 tsp cinnamon1 tsp nutmeg3 tbsp unsalted butter
Directions
Preheat Oven to 325 - Slice peaches and combine with their own juice. Add 2 tsp sugar and stir. Drizzle 1 Tbsp Lemon juice on top. Pour into an 8 or 9 inch oven safe dish that has been sprayed with cooking spray.

Put all topping ingredients into food processor. Grind till coarse (no visible chunks of butter should remain). Sprinkle mixture on top of peaches.

Bake in oven for approx 30 min, or until topping is brown and filling is bubbly.

    I liked that this was fairly low calories. It was quite delicious. I prefer my crisp to be crispy and more together. Not sure if it was just me or if it always turns out like this. - 8/2/13
