Chunky Vege Pizza

Chop or Dice the following ingredients: 1/2 large onion 1 clove fresh garlic 2 stalks of celery 2 carrots 2 large, red, ripe tomatoesYou will also need: a carton of fresh, sliced mushrooms 2 whole wheat english muffins-toasted 4 slices of mozzarella cheese 1 T of olive oil 1 t sp. basil 1 tsp. oregano
Place 1 Tbsp of olive oil in a pan over medium heat. Add garlic. Heat until toasted, lightly brown, (1-2 minutes)
Stir in mushrooms and onions. Cook until onions are clear.(3-4 minutes)
Add celery and carrots. Stir and cover until carrots and celery are cooked, yet firm.(4-5 minutes)
Add in tomatoes, stir and cover until tomatoes are heated through..(5-6 minutes)
Sprinkle with oregano and basil.
Split english muffins, toast and place on four plates
Add one slice of cheese to each muffin half.
Place 1/2 to 1 Cup of sauteed vegetables over the english muffin and serve....DELICIOUS!!
