Clay's Sweet Thai Chicken

Ingredients
3 skinless,boneless chicken breasts1/2 tsp sesame oil8 scallions, chopped6 tbsp thai sweet chili sauce
Directions
Cut chicken into strips 3 inch by 1/4 inch.
Chop scallions crosswise about 1/8th inch.

Heat a fry pan on high, add oil, and let smoke for 2-3 mins.

Add chicken stir well to coat all sides with sesame oil.
Fry chicken 8-12 mins, until cooked through and golden brown on outside.

Remove from heat, and add scallions and sauce.
Stir, let stand 2 mins.

Serve over rice (I prefer basmati with this)

    It was awesome! However, I didn't use sweet chili sauce. I forgot to buy it. Instead I substituted it by mixing Scotch bonnet pepper sauce with honey. Actually worked quite well :) - 3/6/11
