One-Pan Baked Chicken w Peaches and Plums

Ingredients
3 tbsp fresh lemon juice3 tbsp agave nectar1/4 c olive oil1 tsp chopped garlic1 tbsp dijon mustard1/2 tsp dried thyme (or 2 tsp fresh)1/8 tsp ground ginger4 3-oz chicken breasts, boneless, skinless2 fresh peaches, peeled, pitted and sliced2 fresh plums, pitted and sliced2 tbsp almond slices
Directions
Preheat oven to 375

In 7x11 baking dish, combine lemon juice, agave, olive oil, garlic, mustard, thyme, and ginger. Place chicken in baking dish and turn to coat both sides.

Place peaches and plums over chicken and spoon some lemon mixture over all. Top w sliced almonds.

Bake for 25 minutes, basting every so often w juices, until chicken is cooked thru and juices run clear.

    Great recipe! Very easy - I love one dish recipes! I toasted the almonds a litle bit too before sprinkling them on. The peaches and plums make it very fresh and light tasting. Served it with rice pilaf and my family really enjoyed it. - 8/17/10
