Eggplant Appetizer

Ingredients
1 eggplant2 tomatos1 tsp oil oil2 oz. shredded mozzerella cheesebasil
Directions
1. Slice eggplant into 1/4" thick slices. Place slices on non-stick baking sheet. Brush with olive oil and broil for about 5 minutes. Turn slices over, brush with olive oil and broil for another 5 minutes.
2. Top each slice with one slice of tomato and broil for another minute.
3. Top with cheese and basil and broil until cheese is melted.
Serve with a dash of Italian dressing (optional and not included in nutritional info.). You might want to remove the skin of the eggplant, but I don't.
