Cool Cucumber Soup

1 English curcumber1/2 clove garlic. crushed1 cup lowfat plain yogurt1/4 cup low fat milk1/2 tbsp lemon juice3/4 tsp salt1 tbsp olive oil1/4 tsp curry powder1/4 tsp ground cumin1/8 tsp crushed red pepper1/2 small ripe tomato (2 oz.), chopped1/2 tbsp sliced fresh mint (optional)
Slice cucumber into small slices for garnish. Set aside.
Slice remaining cucumber into cubes to blend.
Blend together cucumber, garlic, yogurt, milk, lemon juice, and salt until almost smooth.
Pour into bowl and chill in refrigerator for at least 2 hours.
Meanwhile, combine olive oil, curry powder, cumin, red pepper. Heat over medium heat until spices are fragrant, about 3 mins. Remove from heat and strain through a seive into a cup.
Combine garnish, soup, in bowls and drizzle each with curry oil.
Makes 2 servings.
