Braised Red Cabbage with Pancetta

Ingredients
small head red cabbageBalsaic Vinegarpackage of TJ's cubed Pancettared oniongarlicsalt & pepper to taste
Directions
slice cabbage in to 1/8th to 1/4 inch "slaw"
chop garlic & onion
saute pancetta & remove when crispy
add onion to pancetta fat
saute until slightly softened, add garlic & stir
add balsamic vinegar & reduce for 15-20 minutes until thickened (almost syrup consistency)
Add cabbage using balsamic reduction to coat.
Salt & pepper to taste.
Cover & cook for 30-40 minutes.
Stir in pancetta before serving.
Makes 9 servings.
