16 oz chicken breast halves, (4)1/3 cup of lemon juice Salt & Pepper (liberal amounts of both) 1 teaspoon dried rosemary, basil. or sage (optional)
Arrange the chicken in a shallow greased baking dish. Sprinkle each piece liberally with rosemary, salt and pepper. Dribble on the lemon juice. Cover and bake the chicken at 375° for about 25 minutes, or until the chicken juices run clear when you poke the biggest piece with a fork. *For extra flavor you can baste the chicken with the lemon flavored pan juices every 15 minutes or so.
